Stick burner vs Pellet… it’s time tending the fire question for me. Pellet poopers are way less work, but you can up your smoke or lower it with a great deal more variability with a stick burner. If you have the money, I’d go Yoder.

One 20-pound bag is sufficient for several cooks, though usage will depend on the temperature setting and weather conditions (wind and cold will increase pellet consumption). Under normal circumstances, a pellet grill will use about 1/2 pound of pellets per hour on the smoke setting and 2-1/2 pounds on high.

Eric, I’m sorry for the trouble you’ve had with your Traeger. Not sure this will help, but here is how I make sure I don’t have the problem you had. When I start after a long previous cook or any cook at all really, I vacuum out all the dust and vacuum out the burn pot. Then, I put a handful of pellets into the burnt pot, insert the heat deflector, the drip tray, and grate. I find that this keeps things working well. Sometimes, the burn pot will get too full of ash and this can cause the problems that you had. Give it a try. If it works, please let me know.
This four rack smoker is very easy to use. The unit holds a steady temperature well, although it can take quite a while to get up to temperature. Clean up is also super simple with the racks pulling out for easy cleaning.

It was the last day in the road show so I figured we could always return it if we have buyer’s remorse. Having no past experience with pellet smokers/grills, I am doing my due diligence in researching the reputation of this company and comparing to others in the market. The selling point for us with this particular Traeger grill was the ability to convert this to a built in unit by simply taking off the right side shelf. The sales rep at Costco had a picture of one that his parents had built into an attractive brick surround and we liked the option, however, after reading your post and several other sites, I am finding that Traeger may not be the best investment comparatively and with a purchase this expensive, long-term quality is extremely important to us. In staying within the same price range, I am very interested in the Rec-Tec and it’s stainless steel build. My question is, do you know if the Rec-Tec or another pellet grill @ the $1000 price point can be made to look “built-in” and if so, are there any dangers or potential problems with this.

I have a Yoder 640, I don’t think anything comes close to its quality construction and it’s ability to direct and indirect cook. I believe you buy a Yoder to buy your last grill. Built like a tank, weighs 350lbs, awesome customer service, made in KY. You can buy a China product, but in 5 to 8 years you will be back at the market. Go to a retail store and compare product quality. For it’s price, Yoder is by far the best.

The pellet smoker combines the flavor of charcoal, with the convenience of an electric smoker. The small pellets are made of hardwood sawdust, and when burned in the smoker impart a delicious smoky taste to any food being cooked. Like an electric smoker, the user can dial up the temperature required for the smoke, and let the smoker do the rest. Modern high-end machines provide a regular supply of pellets to be burned, and all the operator needs to do is make sure the smoker does not run out of pellets during the smoke. The argument against bark is that it can cause an inconsistent burn and produce excessive ash. Again, consider a log on a fire. Because they have different compositions, the bark and hardwood burn at different rates and produce different amounts of heat. Furthermore, bark doesn’t burn cleanly, it creates more ash than the hardwood. When that ash builds up, it interferes with your grill’s ability to accurately read the temperature, causing large swings. If too much of that ash builds up in the fire pot, it can cut off the oxygen and snuff out the fire.
Therefore, a large cooker with a primary cooking area of 500 square inches, might actually be of less use to you than a smaller cooker with a total cooking area that includes a 450 square inch primary rack and a 125 square inch secondary rack. If you couldn’t be bothered doing the math, that’s 575 square inches of total cooking space.
These are great changes but the pellet controller is still the old 10-position unit and of course we know that a lot of other makes have moved to much more sophisticated technology, improving temperature precision and maintenance. But it could be the guys at Traeger figure ‘if it ain’t broke don’t fix it’.
How hot you cook something on a smoker grill affects the flavor hugely, so having a good control over the temperature and the knowledge you can keep it at that temperature for however long you need to get the right effects is really helpful. A temperature gage is a must.
Need to keep an emergency pellet stockpile – If you’re grilling with propane or charcoal and run out half way through a 12 hour cook you can easily nip down to the store. But getting your favorite brand of pellets may require an Amazon order, or a trip to a more specialised store.

Just putting a stamp on your info and recommendations. The Pro is definitely a Pro! Consistent, excellent temp control, juicy and great flavor. Smoke ring, some of my ribs are pink all the way through and dripping with juice. Smoke profile, good, not over powering. I have used 45# of hickory so far, 20# of cherry and a few pounds of apple and pecan. Have not tried anything but Lumberjack but that will be the next experiment. I have tried the smoke tube and it is ok. I was worried about getting an ash or bitter taste as the smoke is fairly heavy and a little acrid smelling if you let it burn from bottom to top. So I lay it down and light on my wife’s Weber gas grill side burner and get the whole thing burning good and then blow it out. If it smells acrid your meat will get some of that taste. Starting the tube this way it is still going an hour later.
Hi Craig, you are on the right track, the direct flame is a little limited with any pellet grill. A way to solve this is to employ grill gtates. Great heat retention and searing. Some active movement of proteins and veggies will be required if you want direct flames to impact them.
The Traeger has a 292 square inch cooking surface, which is less than half of that of our #1 pick, mind you it’s still plenty big for most people, you can certainly cook your family dinner on here, you just might not be able to feed the entire football team.
