Wood pellets are an all natural product. No petroleum products in them, no fillers, chemicals, or binders. They are an excellent source of smoke flavor and compact energy, 8,500 BTU per pound. No hot coals, no flareups. There is also very little ash: 10 pounds of pellets will produce about 1/2 cup of ash. All the rest is converted to energy and combustion gases. I clean out the bottom of the ones I tested after about 10 cooks. At high temps there is very little smoke, at low temps the pellets smolder and produce superb but understated smoke flavors. I have found that using the upper shelf gets more airflow around the meat than the lower shelf. I asked the AmazingRibs.com science advisor Prof. Greg Blonder about the problem (he has a MAK 1 Star). He explained that smoke sticks to cool surfaces and wet surfaces, and the surface of meat warms and dries out after a few hours. When he wants more smoke flavor he uses a strong smoke wood like hickory or mesquite, he starts with cold meat, and then he keeps the meat moist by painting or misting it with apple juice or a mop like Lexington Dip or East Carolina Mop or Texas Mop Sauce. Grill – Some smokers actually come in the form of grill-smoker combos. If you don’t have a grill and would like one unit that does it all, you might want to look for one of these options. However, you should know that you will have to spend a bit more money for one of these units, and you should also ensure that you are still getting a high-quality smoker; otherwise, you might be better off simply investing in separate units.
Other than that the build quality is excellent. The materials are heavy and feel like they are made to last. Unlike most smokers that you setup once and then leave forever, this unit can easily fold up and be moved.
Any grills with moving parts and electrical components can break down (a risk not associated with charcoal or wood grills). If exposed to moisture, pellet fuels will disintegrate. People who live in humid climates must keep their pellets dry, preferably indoors in airtight lidded containers.
After about 10-15 hours of cooking, you should remove the burn cup and dump the ash. If the ash builds up it can prevent ignition. Ash also accumulates in the bottom of the unit, but doesn’t impact cooking. A vacuum cleaner with a hose makes short work of it. At the moment, only Blaz’n Grill Works has a slide out combustion cup that makes cleanup much easier, but you still have to get underneath the deflector occasionally and suck out fly ash that has scattered around the lower part of the grill body.
Hopper – That’s where you put the fuel, or pellets, which is them sent through a special auger to the place where pellet is burned. Resupplying pellets in the hopper is a very easy and quick task, often quite different in the case of grills with different type of fuel ( such as propane tanks ).
Don’t dry it out. – Meat that is prepared in a smoker should turn out unbelievably moist and delicious. If you leave your meat in after it has finished cooking, however, it can dry out; therefore, you should remove the meat as soon as it is done for optimal flavor.
Rubbery skin has very little to do with the type of heat (direct vs indirect). Rubbery skin is a result of too low a cooking temperature. Take your smoker/grill or whatever you use and get the temperature in the mid 400’s or even higher and you will get crispy skin. One thing though never let the internal temperature of your bird get over 150 or you’ll have crispy skin and dry crunchy meat too. Take it off the grill and let is rest a full 30 minutes. Best bird you’ll ever eat no matter which grill, smoker, 50 gal barrel, etc you cooked it on.
Cleaning and Maintenance: Any individual who’s taken a stab at cleaning a pellet grill before sees exactly that it is so hard to get all the ash out after use. This unit gives you a less demanding access to the burn pot. It also includes a trap door which permits you to clean the unit without digging through the ashes and oil. Cleaning the unit is by and large significantly less demanding when compared with the normal charcoal grills.
Multi-position controllers: These controllers allow you to adjust the temperature in smaller increments. Pellets are fed in fixed cycles meaning these controllers still don’t offer amazing accuracy. A multi-position controller is typically accurate +/-20°F, in ideal conditions. A nice feature of these controllers is the addition of an LCD screen.
Three adjustable damper valves give users maximum control over their smoke. A heat control dial gives you more precise control over the exact temperature than a simple thermometer, which leaves you guessing how much fuel to add or extinguish. When your meal is ready, the removable porcelain base tray makes cleanup a breeze.
In 2008 there were only two consumer pellet grill manufacturers. Today there are more than a dozen. The market for these relatively expensive devices is small but growing fast. Not all of these small manufacturers will survive. Forget the warranty and ask “When it breaks will the manufacturer still be in business?” They do not have repair shops near you. When it breaks will they be able to diagnose the problem over the phone? They may be able to figure it out, but then you have to buy the replacement parts and do the repair work yourself. Are you up to the task?
So if you want more of a smoke profile, cook at longer and lower temps in your pellet pit. I have found that is the best way to get a more distinct smoke profile in your food. Cook at 180-190 for the first several hours.

Well said John, I have had my Rec Tec 680 for a year now, first pellet smoker. At first I was going to buy a Yoder, but for $1500 I had to do more research, I didn’t need a 350 lb tank I wanted a pellet grill ( I have a 450 lb stick burner). Rec Tec came out on top, warranty sold me. My ignitor rod went out, I called CS on a Sunday, left a msg and they called me back within an hour and FedEx me a new ignitor rod. There’s less smoke from the alleged smoker the higher the generated cooking temperature is. You can get that smoke flavor at below 250°. You need to do the hardwood chips technique in order to get that smoke flavor back.
