Hey Charlie – I’d leave that grate wide open if you want maximum heat. If the grates are only over the burn pot, then you can do sort of a two zone cook (indirect vs direct heat) by putting a thicker steak, chop, or piece of chicken on the ‘non direct’ side to get up to a temp that’s 15 or 20 degrees lower than your target. Then, finish off over the burn pot area. Just one idea.
Turn it on to “Smoke” mode and use the P settings, or cook mode by selecting a temperature. When you select smoke or a temp setting you start the ignition sequence. The fan, igniter and auger motor turn on. The fan stays on until the smoker is turned off. The auger motor continuously delivers pellets to the red hot igniter rod in the firebox for two minutes under normal conditions. Then the igniter rod shuts off and the pellet fire burns with only the assistance of the auger and the fan.

Overall, I think you would be happy with the smaller smoker / grill. I really like what Green Mountain grills has done with the Davy Crockett model, and that is the unit I have personally. That said,Rec-Tec makes a great product, and some people prefer the cart stand it comes with rather than the fold up legs that Green Mountain grills uses on the Davy Crockett modeling. Either choice would be good for you if you are looking for a smaller unit. I am of course speaking about the mini version of the Rec-Tec. The larger version is excellent as well.

I always wanted a wood pellet smoker, but could not bring myself to spend that kind of money. If you can move up from there cost wise, I’d go with the Yoder pellet smoker. While the Rec Tec looks like a beast, the YS640 absolutely IS one. Weighing in at 315 lbs and boasting solid control components and features, you won’t ever need another pellet smoker in your life unless you just want another one.
The online research, the model comparisons, the pricing—choosing the right pellet grill can be challenging, so much so that, by the time you settle on a grill, choosing smoker pellets often becomes an afterthought. While some people simply default to the wood pellets sold by their pellet grill manufacturer, too many others settle for the cheapest pellets available. Because, really, how much difference can the pellets make? A lot, actually.
I would recommend the Bull RT-700 to anybody that is tired of their old pellet smoker. This grill might be a wee bit expensive than most of its counterparts, but none of them can match its features. Not to mention, its interior is spacious enough while its exterior is made of stainless steel, which makes it both durable and easy to clean after use.”
Hey Chris, IMHO the Blazing Pellet Smoker looks like a solid unit. There’s a good review of it here. I think between the units I might give them a run. Yoder makes quality stuff, and if made in the USA is important to you, they fit as do the Blazings. All this said, if you’re basically using the pellet smoker like a Cambro, you could opt to save a little money and go with the Rec-Tec. Good customer service and solid following.
Good info above.  A couple added notes.  LG (Louisiana Grills) and Pit Boss are both owned by a company named Dansons.    I’ve had good success with both the LG Competition Blend and Pit Boss Competition blend.  Some bags have been a bit dusty, other bags just fine.  My current bag of LG Hickory has very few fines, less than either of the CookinPellets bags I’ve tried.  (not to ding CP, they’re good, but use CamelCamelCamel.com to monitor Amazon prices and alert you when they bring the price down.  
Lastly, think about versatility. Our top pick (the Primo 778) is precisely that – a super versatile smoker, with a ton of options. But other smokers also offer some versatility options that really are useful, especially if you’re dealing with limited space. If you junk your kids’ swing set to make space for your three level horizontal trailer smoker, you may be back to smoking for yourself real quick.

The construction and the elements – REC TEC  Pellet grill are an investment for years, safe from corroding. Most of competitive  grills look pretty on the outside and the manufacturers claim they are made of stainless steel. The truth is, only the outside part of the grill is stainless. The steel on the inside is different, and major parts are made of materials of poorer quality.
Look at the shapes mate! The barrel or drum shaped smoker are enough to make you stand up and see what is it! Charcoal smokers are not box shaped or conventional chimney styles, these are more than that.
Remove the pellets from the feed hopper to stop them getting wet or being contaminated by any cleaning products you will use. Empty the ash from the burn cup. Some people line their burn cup with aluminum foil to make the cleaning process more manageable. An ash vacuum cleaner will also do the trick.
The Davy Crockett comes with a PID controller that runs off of a WiFi enabled app.  The app can also be used to monitor the internal meat thermometer and turn the heat down once the meat reaches the target temperature.
Another item is Traeger, which differs from Traeger Lil Tex Elite 22 mostly in size ( the Texas Elite 34 model ).  A great choice if you want to have a real smoker that is also easy to use, big and worth its money. It is expensive when compared to competitive grills, but still worth the money.
If you plan on taking your smoker with you on trips, this is a great choice. It comes apart easily for quick setup and teardown. The aluminum materials are far lighter than any steel competitors, too. Those same materials also make it tougher than many similar smokers. The manufacturers claim it smokes like one of the popular egg-shaped grills. However, since it doesn’t use porcelain, it’s much more durable.

Electric smokers are perfect for beginners. You can “set and forget” these smokers, which makes them simple to use if you aren’t into spending hours outdoors cooking. As long as you have access to an electric outlet, you just might find an electric smoker to be the right choice for you. They generally come with very simple manuals and instructions, and you can pick up your smoker and get started cooking very quickly, without worrying about messing with pellets, charcoal or gas.
A: First, you should add a deflector, convection plate, or a duct. The issue with offset smokers is that the cooking chamber is hotter near the firebox. In our experience, it doesn’t matter what brand of pellets you use, so long as they are quality pellets. Our Pellet-Q450 runs equally well on pellets made by BBQr’s Delight or Traeger or Louisiana Grills. Like most pellet grills, though, it can experience problems when fueled with low-quality cut-rate pellets that produce excessive ash.
Thanks Kevin for the reviews and content. Like many of the folks I too will be purchasing a pellet pooper. I have narrowed my choices to a MAK 2 star and a Memphis Elite. One of the earlier posters indicated on the Memphis that the effective direct grilling space was about 1 square foot. I am assuming that with the smaller footprint of the MAK that the direct “flame zone” is less than that. I’m just wondering how much less.
Once it reaches the ideal temperature, it uses an Internal Temperature Sensor to maintain it throughout the cooking process. Forget about checking on the status of your grilling every few minutes, this unit makes sure your food is cooked thoroughly and evenly — no babysitting needed here! This way, you can enjoy your time with your friends, which is what a BBQ party should be.

Hi Gail, barring any differences that I’m not able to see per the specs for the Pit Boss 820 that differ greatly from a Traeger Pro model. In fact, it looks like they’re using the Traeger body… which anyone can use via sites that sell them from China. Heavy construction, most likely a good cooker.
