Sometimes an inexpensive, less efficient pellet blend might be just fine for burgers or chicken breasts. Other times, you may want to step it up with a premium flavored pellet where whole turkeys, prime rib roasts, or a nice brisket can really shine. No matter what you read in any grouping of pellet grill reviews, know this: pellets are not all made equally. You will wind up with one or two “go to” brands over time that you simply prefer – sometimes for their efficiency (leaving little ash), others for their flavor.

How? I just sold my house and left the Traeger with it. Now in Mexico and thinking of buying a Green Mountain. I would like to get a little more smoke flavor than what I was able to with my Traeger (which I loved). So how can you use other hard wood to enhance the smoke flavor? Also comment on how to use the tube smoker in one of these pellet fed grills. With 1 1/2″ rib eye, I would smoke for 45 minutes then crank up the heat to about 350 for 13 minutes and it would provide a perfect rare steak every time.

Mo’s Smoking Pouch is essential for gas grills. It is an envelope of mesh 304 stainless steel that holds wood chips or pellets. The airspaces in the mesh are small enough that they limit the amount of oxygen so the wood smolders. Put it on top of the cooking grate, on the burners, on the coals. It holds enough wood for about 15 minutes for short cooks, so you need to refill it or buy a second pouch for long cooks like pork shoulder and brisket. Meathead says his has survived more than 50 cooks and he likes it better than the smoker tubes.
Great product. Well made and simple to use. Used it the day it arrived to smoke cheese. Used the following week to boost the amount of smoke in my Traeger during a higher cook temp. Still had 1/2 of the pellets let after the pork was done, so I moved it to into an even larger grill and guess what???? Smoked some more cheese. Very good smoke enhancer and cold smoke generator.

Of course, the grill is equipped with porcelain grates, which are easy to clean and don’t require maintenance like cast-iron grates for example. The downside is that the porcelain surface is delicate, so use soft brushes ( preferably buy a  nylon brush ).
Eric, I’m sorry for the trouble you’ve had with your Traeger. Not sure this will help, but here is how I make sure I don’t have the problem you had. When I start after a long previous cook or any cook at all really, I vacuum out all the dust and vacuum out the burn pot. Then, I put a handful of pellets into the burnt pot, insert the heat deflector, the drip tray, and grate. I find that this keeps things working well. Sometimes, the burn pot will get too full of ash and this can cause the problems that you had. Give it a try. If it works, please let me know.

The flavor you get from a gas smoker is probably better than from an electric and not quite as good as from charcoal, so it is a good compromise solution. Once the burner is lit, and the food is in the smoker, one eye on the inbuilt thermometer, and a hand on the gas regulator to get the temperature just right is all that is needed. So, if you want to do a pellet smoker cook using 100 percent cherry wood pellets, you’re going to use more fuel than you would with a cherry/hardwood blend, and it’s going to cost you more as well on average.
