Hey DS – You’re dead on correct re: Grilling vs. Smoking. Most to nearly all Pellet Smokers are used as “smokers” in the truest sense. Louisiana Pellet Smokers boast a direct fire feature for grilling, as do Yoder smokers. However, I’m with you in that a grill is a grill and a smoker is a smoker. GMGs are very popular down here on the FBA circuit. However, most folks do find that they don’t produce the amount of smoke preferred for competition meats (which, in truth is a complaint about many pellet smokers). This is why stick burners and “some” gravity feds get a boost in rep among competition cook teams. That said, I do see folks happily using pellet smokers, and some win with them. One “trick” I see used now and again to boost the smoke output on a pellet smoker is to use one of those smoke tubes… like the A-maze-n Tube Smoker. As recently as 2008, only two companies manufactured pellet grills (Traeger and its rival, MAK, also based in Oregon). But the expiration of Traeger’s original patents opened the floodgates to competitors. Today, pellet grills have entered the mainstream: more than 20 brands of pellet grills are available in North America. Even competition barbecuers have started to embrace this revolutionary smoker and are winning, causing some old school pit masters to complain. Why? Because in their words, smoking on a pellet grill is “too darn easy.” (Sound familiar?)
First, how it works. The detachable firebox (sitting on the rear-top of the smoker) holds your fuel source. While your fire burns upwards, the hot gases from the wood being burned off are sent through a tailpiece that connects to the intake on the cooking chamber. The controller (front-top) acts as a vacuum, drawing heat through the cook box using a draft fan and a convection fan. Sensors let it know how hot it is inside and will act accordingly. There’s a mixing tube for the hot air in the back which eliminates hot spots and creates an even temp throughout the smoker.
As new manufacturers are getting into the market to cater to the growing need for pellet smokers and they are coming up with unique features to help them stand out from their competitors. This is a great advantage for the users, since the competition is pushing for more innovation into the barbecuing industry.
Before buying, please note that most pellet smokers need access to electricity to run the digital controller, the auger that transports the pellets to the firebox, and the convection fan that circulates the air in the cooking chamber. These cookers can use a lot of pellets at high temps. At high temps there is little or no smoke, and at low temps smoke is unavoidable. So if you want to cook, say, a chicken breast low and slow to retain juices, but you don’t want any smoke flavor, you’re outta luck. If you want to torch a thin burger to get a crunchy crust and add a little smokiness, you’ll get great smoke flavor, but it is hard to get the crust. But if you want killer ribs, bacon, smoked salmon, etc., pellet burners are hard to beat for convenience and quality.

    Other guides might offer a list of the best pellet grills, complete with links (links that are often paid). However, your best resource isn’t a list, but the knowledge that will help you know what you’re looking at and ensure you get a pellet grill you’ll be happy with.
    So that brings me to the one thing I have learned in all this that I basically read when I was getting started. One of the biggest keys is “Temperature Control”! If you want consistent food make sure you get that under control. It is the key to solid consistent food! Once you get your food consistent you can experiment with a lot of other things. But if you can’t get that down, you will always be looking for another magic bullet. The number one magic is temperature!
    Central to all pellet cookers is a digital controller similar to the controllers on modern indoor ovens. You select a temp you want, and there is an LED display that tells you the actual temp. Some of the controllers also are programmable so you can cook at a certain temp for a determined time. Some have leave-in meat probes that can dial back the ovento a holding temp when the meat hits its mark.
    Another vertical smoker, the Weber Smoker Mountain is a popular unit in both backyards, and on the national competition circuit. This water smoker is divided into sections. From the bottom up, you’ve got a fuel section which is then separated by a large water bowl, adding moisture to the chamber while stopping any juices from hitting the coals (flare-ups). Then, you’ve got your cooking area which has two levels of grates and a large dome area on top. Both levels provide ample cooking space.
    In cook mode the thermometer in the cooking chamber sends info to the microprocessor which controls the auger. When temperature is correct the auger motor is idle. When the temp drops below a set threshold, the auger motor kicks in and delivers pellets until the desired temperature has returned.
    There have been some reports from some customers that the temperature gauge may not work properly for smoking purposes because it does not hold a steady temperature as it swings wildly from over one hundred to over three hundred regardless of the temperature being set to 225. There have also been some complaints about the product rusting in some spots.
    The Ortech has two knobs. The large one, the “Cook Control” has settings for: Off, Smoke, 180, 225, 250, 275, 300, 325, 350, 375, and High. One smoker manufacturer says that the “Smoke” setting is about 160°F and “high” is about 525°F, but both can vary due to ambient temperature, humidity, fuel type and quality of the smoker. Another knob, a teensy weensy knob to the right of the LED screen looks more like a push button. Labeled “SMOKE” and called the “Smoke Control Knob”, it is meant to turn, not push, and it controls the pellet feed rate with auger on/off sequences indicated by “P settings”. The P settings range from P0 to P15.
    Only 1/3 of a cup of pellets is needed for most cooking events. As compared to other forms of smoking wood, you’ll need 5-10 times the weight of wood to achieve the same results as pellets. The cost per use is much less for pellets than any other form of wood.
    This is as close to perfect as you’re going to get. From smoking at lower temperatures to grilling food at higher temps, you get the best from all words, in an incredible looking package, made with quality materials that’ll last you season after season of heavy use. More heat requirement will use more pellet, and less heat will use less.     The sheer amounts of meat people have been able to fit into this unit is also impressive, but not surprising given the ample size of it. For example, one family could smoke four twelve-pound turkeys at once, six full racks of baby back ribs, or two large briskets.
    The CB940X is a really nice model with excellent construction specs. The body is a heavy gauge steel and the cooking racks are cast iron with a porcelain coating. The unit also has a helpful fire pan adjustment mechanism that really reduces the complexity of temperature control for direct cooking.

  6. Hi Jennifer, the Traeger grill you purchased should serve you well. You can see a picture of one of them installed here. I think this is the grill style you bought. One thing the sites you’ve researched (including my own article above) might not have stressed is that Traeger recently hired a new CEO and is actively working to attain the name, reputation, and reputation for quality that they once had. I’m confident should you have any problems with your unit that they will stand behind it and take care of them for you.
    The pellet smoker grill is the king smoker grill, because it combines the pros of all the other grills. I know once you read all the good things there is to know about this type of smoker you will agree.
    Also own a Big Steel Keg which I love! Didn’t want an egg or a Primo while I was up north WY & CO as I had to many friends complain about cracking when trying to use them in cold weather! Many times at Thanksgiving or Christmas I have cooked on any or all of these devices at -5 to -10. It can be done but with a strong wind it is quite a challenge! My Weber (been thru a couples) and my Keg still have high ratings for great steaks and burgers. But for low and slow you are pushing it to get there and my friends with the ceramic style units say it takes some practice and close attention. What I don’t like about and Egg or my Keg is if you do need to end up feeding the fire on a long cook it is a real serious challenge!
    Thanks for the quick response and advice. I see a pellet pro hopper assembly is around $250 compared to the Memphis pro at over $2000. I didn’t realize that drafting isn’t important for the sake of temp regulation but what about how the smoke travels from the firebox towards the meat? I also would like to include an element of humidity, is simply putting a pan of water in the cooker or is there a better way?
    Just like with the 3 position controller, with a multi position controller the pellets are fed in on a fixed cycle. In ideal conditions a multi position controller can maintain the temperature at about +/-20°F. In windy conditions however the controller is less reliable and not as accurate.
    The Davy Crockett Pellet Grill by Green Mountain Grills is a pellet smoker that comes complete with open-flame technology, 110v or 12v with adaptors (3 power options).Is this one of the best pellet smokers? It certainly has quite a lot going for it to make that claim. Like being WiFi-enabled, of all things.
    Personal review of the Traeger: The auger fed the pellets after the fire pot went out making a large pile up which caused it to catch fire and burn up my grill. I had to use a fire extinguisher to put out the flames and prevent my house from catching fire. I sent Traeger the description of damages with photos. After much waiting and no response from the management team regarding my Traeger grill we gave up. The service team was very responsive but lacked any authority to make decisions to fix the grill. We worked with the service team for awhile having a different person each time respond and request information and photos that were already provided. Then, we got passed up to the management which is highly ineffective because we never heard from them, even after an email requesting an update. We really did like our Traeger grill and had high hopes that since it was under warranty and caught fire due to a failure we would have the grill repaired. Because of the terrible unresponsive service of Traeger we took our money and purchase a Green Mountain Grill.
    For sure MAK does a fantastic job blending stainless steel fabrication with precision design and craftsmanship. Their temperature control system (called “The Pellet Boss”) is hands down the best in the business, according to Meat Head over at AmazingRibs.com. Hey, if Meat Head says it’s so… then it’s so!

  7. The Char-Broil Vertical Gas Smoker is cheaply built, but not as bad as most gas smokers in this price range. It is narrow so you have to cut rib slabs in half, but it can hold a lot of food. Once you get the hang of it, it can hold temps pretty steadily and it doesn’t require nursing.
